01
Which direction suits a cloud kitchen?
A cloud kitchen can work in a unit facing any direction; what matters more is that cooking, storage, packing and pickup each sit in a suitable zone inside it. North, East and North-East entrances are generally considered favourable, and entrances in other directions can be balanced once the door's exact पद (pada, a segment of the wall) is checked.
Delivery-only kitchens in Mumbai often run from compact commercial units, ground-floor galas or basements in mixed-use buildings, with no dining room at all. That makes Vastu simpler: the whole unit is a working kitchen, so the layout can be planned around the journey of food from the supplier's van to the rider's bag.
The guidance below builds on our restaurant and cafe Vastu guide, adapted for a business with no guests on site.
02
What comes before Vastu in a cloud kitchen?
Fire safety and food safety come first in any commercial kitchen, and Vastu should always work within them, never against them.
01
Food safety
Hold the FSSAI registration or licence that applies to your business and follow its hygiene requirements for storage, preparation, pest control and staff.
02
Fire safety
Follow your local fire department's requirements for gas installations, exhaust systems, extinguishers, exits and any approvals your premises need.
03
Gas and electrical work
Use your gas supplier's approved installers and a licensed electrician for every connection, especially for heavy equipment.
04
Building permissions
Check what your landlord, building or commercial complex allows for exhaust ducts, signage and rider waiting.
03
Where should the stove go in a commercial kitchen?
The main cooking range, tandoor, fryers and ovens belong in the South-East, the आग्नेय (Agneya, the fire zone ruled by Agni), with cooks facing East while they work. If the South-East is not available, the North-West is the accepted alternative for cooking. Our article on Agneya, the fire zone in the South-East explains this zone in more depth.
01
Keep fire and water apart
Leave clear distance between the range and the sinks or dishwashing area.
02
Exhaust and ventilation
A well-maintained hood and exhaust keep heat, smoke and grease under control; clean the filters on a regular schedule.
03
Avoid the North-East
Keep burners, tandoors and heavy equipment out of the North-East of the unit.
04
Gas supply
Place cylinders or the gas bank exactly where your supplier and the fire department require; where there is a choice, the South-East side suits Vastu.
04
How should a cloud kitchen flow from receiving to dispatch?
Plan the kitchen so food moves in one direction, from receiving and storage to preparation, cooking, packing and pickup, without crossing back over itself. A one-way flow supports hygiene and calm, and it maps neatly onto Vastu zones.
01
Receiving
Raw materials come in through a service door and go straight to storage on the South or West side.
02
Water
The drinking-water purifier suits the North-East, and sinks and dishwashing the North or East side, kept spotless.
03
Preparation
Washing, chopping and marination tables sit between the water points and the cooking line.
04
Cooking
The range in the South-East, with cooks facing East.
05
Packing and pickup
Finished orders move towards the North-West for packing and hand-over.
06
An open centre
Keep the ब्रह्मस्थान (Brahmasthan, the centre) free of heavy equipment, stacked stock and partition walls; a light, movable prep table is fine.
05
Where should cold storage and dry stores go?
Dry stores, sacks and heavy racks suit the South-West, South or West of the unit, while refrigerators and freezers suit the South-East, with the North-West as a second choice.
The South-West, known as नैऋत्य (Nairutya, the South-West), is the zone of Earth and stability, so grain, oil tins and packaging stock sit well there. Refrigeration is electrical equipment, which is why the South-East suits it, close to the cooking line. A large walk-in cold room, being heavy, can also sit along the South or West walls. For bigger stockrooms, see our warehouse and godown Vastu guide.
01
Label and rotate
Label stock clearly and use older stock first, which helps food safety and keeps the store orderly.
02
Off the floor
Keep sacks and crates on racks or pallets, never directly on the floor.
03
A light North-East
No sacks, oil tins, brooms, dustbins or refrigerators in the North-East.
04
Packaging stock
Boxes, bags and containers can sit in the West or South-West, near the packing area but not blocking it.
06
Where should the packing and rider-pickup counter be?
The packing table and rider-pickup counter suit the North-West, the वायव्य (Vayavya, the North-West) zone of Vayu and the Air element, which is associated with movement. Orders packed and handed over from here are traditionally believed to move out smoothly.
Place the pickup point close to the exit, ideally as a hatch or counter, so riders collect orders without entering food areas. Keep order screens, aggregator tablets and the printer on the North or East side of the counter, and light the area well, since riders arrive at all hours. If your door is on another side, put the pickup counter nearest the door and keep the packing table in the North-West part of the kitchen.
01
A clear waiting space
Give riders a defined place to wait that does not block the corridor, neighbours' shutters or the building entrance.
02
A clear counter
Wipe and clear the counter between rushes, and restock packing materials so it never becomes a pile.
07
Where should the owner's desk, staff areas and waste go?
The owner's or manager's desk suits the South-West, facing North or East; staff toilets and changing areas suit the South or West side, never the North-East; and waste bins sit in the West or North-West near the service exit.
01
Owner's desk
A solid wall behind, facing North or East, with licences, accounts and records close at hand.
02
Payments and records
Most orders are paid online, but the business desk, payment records and any cash box suit the North, the direction of Kubera.
03
Toilets and changing rooms
Between the South and South-West, or between the East and South-East, well away from food areas, ventilated and spotless.
04
Waste
Covered bins in the West or North-West, emptied often, away from the North-East and from stored food.
08
Can a cloud kitchen run from a South-West facing unit?
Yes, a cloud kitchen can run well from a South-West facing unit; the exact pada of the door matters more than the broad direction, and non-structural remedies can balance the entrance.
Keep the entrance bright, clean and uncluttered, with no crates, bags or garbage stacked by the door. After a compass check, remedies may include a metal threshold strip, activated pyramids or protective crystals near the entrance. Inside, keep the South-West zone heavy and stable with dry stores or the owner's desk, and plan rider pickup so that riders do not crowd the doorway.
These remedies suit rented units because nothing is broken: colour, metal strips, pyramids, crystals and lighting can move with you to your next premises. Clean white or cream walls support hygiene, and warm accents such as peach or terracotta near the South-East keep the cooking zone lively.
09
When to consult a Vastu expert
The most useful time to consult is before signing a lease or ordering equipment, since gas lines, exhausts, drains and cold rooms are expensive to move later. A consultation can also help an existing kitchen where orders, staff or deliveries feel stuck.
Dr. Kimaya Parikh-Ambekar advises restaurants, cafes and cloud kitchens on-site across Mumbai from VastuKimaya's office in Andheri East, and through distant consultations using floor plans and photographs. Her remedies are non-structural and planned to sit alongside your fire and food-safety requirements. Founders starting from home may also find our home bakery and home food business guide useful.
