In Mumbai, many eateries work within tight shop units, food courts or cloud kitchens. The guidance below can be adapted to all of these, and much of it needs no structural change.

What should a restaurant entrance look like?

A restaurant entrance should be bright, clean, open and easy to find, with a well-lit signboard and nothing blocking the door. North, East and North-East entrances are generally considered favourable, and entrances in other directions can be balanced once the exact pada is checked.

Keep delivery bags, bikes and garbage away from the guest entrance, and use a separate service entry for supplies where possible. A reception or waiting area in the North-East, kept tidy and pleasant, gives guests a good first impression.

Where should the kitchen be in a restaurant?

The kitchen, along with heating equipment such as ovens, tandoors, generators and inverters, is ideally placed in the South-East, the zone of अग्नि (Agni, fire). If the South-East is not possible, the kitchen can be in the North-West.

    Cooks ideally face East while working at the main range.

  • Stove and sink apart

    Keep the cooking range and washing area separated, as fire and water are opposing elements.

  • Exhaust and ventilation

    Good chimneys and exhausts keep the kitchen fresh and the dining area smoke-free.

  • Clean and bright

    A clean, well-lit kitchen supports both hygiene and the energy of the food.

  • Avoid the North-East

    The North-East is not suited to the kitchen and heavy cooking equipment.

Where should the cash counter be placed in a restaurant?

The cash counter is ideally placed in the West or South-West of the restaurant, with the cash drawer opening towards the North or East. The person at the counter should face North or East.

Keep a solid wall behind the cashier, the counter neat and the billing system in good working order. Keep old receipts and unused items away from the cash drawer. Some owners keep a small Kubera Yantra or a Citrine crystal near the counter as a symbol of prosperity.

How should dining seating be arranged?

Arrange dining seating mainly in the North, East and West parts of the restaurant, with comfortable space between tables so that guests and staff move easily. Diners facing East or North while eating is traditionally considered pleasant, though guest comfort always comes first.

  • Keep the centre open

    Avoid heavy fixtures in the ब्रह्मस्थान (Brahmasthan, the centre).

  • Avoid seating under beams

    Use false ceilings or lighting features to soften exposed beams.

  • Heavier furniture to the South and West

    Booths and bar counters suit these directions.

  • Clear service paths

    Leave direct paths from the kitchen to the tables and from the tables to the exit.

  • Outdoor seating

    Open-air or balcony seating suits the North and East sides.

Where should water, storage and washrooms go?

Place water sources such as drinking-water purifiers and overhead water points in the North-East or North, and heavy dry storage in the South-West. Cold storage and refrigerators can sit in the South-East or North-West, close to the kitchen.

Washrooms can be placed between the South and South-West, or between the East and South-East, and should never be in the North-East. Keep them spotless and well ventilated, as washroom cleanliness strongly shapes guests' experience.

Which colours and lighting suit a restaurant?

Warm, pleasant colours and good lighting suit restaurants, because a dark, dim interior can feel unwelcoming. Warm tones such as peach, orange, terracotta and soft yellow are associated with appetite and warmth, especially near the South-East.

Balance warm tones with cream, off-white or natural wood so the space does not feel heavy. Use warm, even lighting in dining areas and bright, clean lighting in the kitchen. Fresh flowers or plants at the entrance and a soft background of pleasant music add to the atmosphere. Remove broken décor and replace faded signage promptly.
